I am not here to preach the benefits of Gluten Free living. Nor am I going to go into how Gluten can actually be seen as a political issue in Egypt today. I am going to assume that you have come here because you, like me, are living in Egypt and your lifestyle requires you not eat gluten or lactose.(Please remember you should NEVER EVER cut anything out of your diet completely without taking advice of a Doctor). This is an attempt to collect as much different useful information, recipes and experience of day to living strategies for the Gluten and Lactose Intolerant specifically relevant to the Egyptian experience.

Hello! I’m Leila, I’m lactose intolerant  (all my life) and gluten sensitive (a recent development). I have always ignored food recommendations and eaten whatever I wanted until late February 2012 when after feeling particularly ill I decided enough was enough and I was going Gluten and Lactose free, FOR GOOD (or at least 6 months). Explaining this to Egyptians usually earns me shocked looks and horrified comments, one friend’s reaction was, “How did you survive evolution?”

Well I did and I was surprised by the number of people I found in the days that followed who live in Egypt with these issues and ignore them. People who are consequently often ill and all because they have never been able to find or understand substitutes. I love and have always loved ‘faffing with recipes’, as my family puts it, so decided to make this blog and I hope that it is somewhat useful to you.

Please bear in mind, I do not have Coeliac (Celiac) disease so I cannot account for cross contamination risks in the substitute flours I personally use from Egyptian factories. In cases where I am using that type of flour and have not found an Egyptian source of GF flour it will be noted on the post . Gluten Free is (GF) and Lactose Free is (LF).

    Awesome! Thank you! I have to be LF because of my lactose-intolerant one-year-old (who’s nursing) and I have a very close friend who’s GF/Celiac, so this is so awesome, and I will share LF info and recipes and thoughts, and also send it over to my GF friend. Thanks, Lilz!

      Hi, please PLEASE be careful being LF with babies and kids and make sure they do get all the supplements they need as doctor instructs. 🙂

    Good for you Leila! I’m Marcia’s GF friend. My daughter and I have been GF in Egypt for a few years now. There is some GF polenta available here, but all of the other flours are cross-contaminated. Since it only takes a few crumbs to cause damage, my baking here is minimal. Good luck on your GF journey.

      Yes I figured which is why I am going to explain making your own flour at home also I have been told about a health food shop that reputedly sells real GF/CF flours. I will check it out soon and post.

    Hello Leila, I’ve been LI for over an year now, my case is Secondary Lactose Intolerence due to virus infection, which have lead to extreme sensitivity to extreme low amounts of lactose, (Like a panadol pill would cause me problems). However I’ve did quite good work, were I could identify lots of products that could contain lactose, an example is what kind of Haribo products that are lactose free, medicines, ketchup, mayo, Chips and Crackers.       Milk allergy? Or Lactose intolerance? For allergy you need to stay away from.milk entirely. But you can have soymilk. Alfa and metro have a good selection. Also during fasting season it is easy to find “fasting cheese” which was milk free.

    Hello from Toronto, Canada! I was wondering if quinoa pasta is readily available in eqypt. I’m converting Macarona Bechemel into a healthier version for a culinary project. My teacher is concerned that it is not available and people in eqypt wouldn’t take the effort. I’m hoping to prove her wrong!!! Thank you! All the way from Canada!!

      Hello cristina, it’s not available readily,I haven’t seen it at all actually. but maybe they have it in health food stores. The pasta they have now is corn pasta and rice noodles

      Metro had it, mahalawy as well, carrefour maybe. It’s called lactolife if i remember correctly. There’s a group on facebook, you can ask there as well

    Hello Laila! I’ve been gluten free in Egypt for 3 years or more now. It’s not as tough as people make it sounds.
    Although I make my own version of gf pizza and tortillas (easiest thing in the whole world)
    The real struggle is when I go out with friends and they can order all the pizza and the burgers they want all the time, anytime.

    But I’m not complaining haha. I’m not a celiac patient though. Gluten intolerant but in a severe way. My body just hates wheat.

    Btw my best friend is LF and when I read that I can find cheese substitutes here in Egypt in one of the comments I couldn’t believe it.

    There are lactase enzyme pills that can be taken with the meal containing lactose. They do work but i used to buy them from abroad. Does anyone know if they are available here? Also, i think lactolife stopped producing or something as people in metro told me there wasnt enough demand for the product.

    Hello everyone
    One of the few places in Cairo (if not the only one) serving coffee drinks using LF milk is Espresso Perfetto in Downtown Mall Katameya.
    This is until LF milk is imported again or produced locally.
